Zucchini Chocolate Chip Muffins

I love zucchini bread with my entire being. My ENTIRE being. It is a snack that speaks to my soul. And by golly, it should speak to yours too. Here's my go-to zucchini chocolate chip muffin recipe.


1.5 cups all-purpose flour

3/4 cup white sugar

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg 

1/2 teaspoon salt 

1 egg, lightly beaten 

1/2 cup vegetable oil 

1 tablespoon lemon juice 

1 teaspoon vanilla extract 

1/4 cup milk 

1 cup shredded zucchini 

1/2 cup chocolate chips (option, but highly recommended!) 


1. Preheat oven to 350 degrees F. Grease, or line, muffin cups (12). 

2. Combine flour, sugar, baking soda, cinnamon, nutmeg, and salt in large bowl. Mix egg, oil, milk, lemon juice, and vanilla extract in a bowl. Then stir in the dry ingredients to wet ingredients. Lastly, fold in zucchini and chocolate cups. 

3. Bake in the preheated oven for 20-25 minutes. Test doneness inserting a toothpick, the toothpick should come out clean. 

There ya have it, folks! These are delightful, and make a great little breakfast treat on the go! I personally loooooooove the little chocolate chip touch, but my mom and sister prefer them without for the sake of 'breakfast properness'. Either way, they're great. You won't lose with these bad boys!
